Orange Almond Chicken

List of ingredients/quantities:

4-5 whole chicken breasts

1 cup bread crumbs

2 tablespoons fresh chopped parsley (dried is fine too)

1/2 cup almonds (finely chopped)

1/2 teaspoon salt

1/2 teaspoon pepper

1 cup frozen orange juice concentrate (thawed)

1 cup melted butter

1 teaspoon sugar

Directions:

Rinse the chicken breasts and pat dry. Lay aside. In a separate bowl, combine the thawed orange juice concentrate, sugar and melted butter. In another bowl, combine the bread crumbs, chopped almonds, salt, pepper and parsley. Spray a 9 x 13 baking dish with non-stick spray. Dip each chicken breast in the orange juice/butter/sugar mixture, allow any excess to drip off and then place into the bread crumb mixture. Coat the chicken breast evenly on each side and place in the baking dish. Repeat with remaining chicken breasts. Take the left-over orange juice mixture and pour approximately one tablespoon-full over each chicken breast in the baking dish. Discard any remaining orange juice or bread crumb mixture. Bake in a 350 degree oven for 55-60 minutes.

My Husband and I learned this recipe while on our honeymoon. It's been a favorite in our family for years and is a wonderful, quick and easy addition for any occasion.
